I'll be honest. I played shadow of mordor 4k with a single card because SLI was off and I didn't realize it and it ran decent. Max settings got me 30 fps.

my goal was to get 1080p at 60 fps on most games. would this do it? will i be able to add more ram to the mobo in the future if i need it?

8GB should be enough memory for any current game.

 

You could go with a much lower capacity psu. Something around 550W would be fine. 650W if you want to allow for a second gpu.
