I'm probably going to get hate for this but I'm building my first PC and I have a VGA only monitor at the moment. The GPU I wanted (Nvidia GeForce 970) doesn't have this port (probably for a good reason) but as a temporary solution, could I convert one of them to a VGA with an adapter?

Yes.

You can convert DVI (DVI-I) to VGA with a cheap adapter.

Yes.

It would be easier to use one of your card's mini display port ports, and then adapter off from that to VGA which can be done with a very inexpensive adapter.
