I'm not sure what to go with, 2 way SLI GTX 960 or 1 GTX 970?

I'd go with the 970.

 

2GB VRAM won't cut it for much longer.

Depends on which resolution you are going to game on. I've seen benchmarks showing slightly fps improvement with a 960 sli configuration than with a single 970.

until the card takes a shit and frames become slow you experience stuttering. Not too many sites will tell the whole story.  Piss poor bus speed and terrible memory bandwidthg for a modern card. Never buy a card solely based on frame rates.

970 hands down...you don't want a 2GB GPU in 2015.
