What's the recommended GPU(s) for the above specifications that can run almost all games at 60 Hz.

Two GTX 970 or two R9 290X will be perfect for 3440x1440 and will likely give you some head room for the future as well.

Yeah agree, a pair of 290s would be the best option.

Surely a single GPU solution should suffice, weren't not talking about 3x 27 " 1440p monitors in surround.

well, instead of suggesting you to waste money, i would suggest to just get a single 290 (nonx) ... they are cheap and will play 99.9 % of games in existence @ max on that res @ 60fps

 

the remaining 0.1 % of games will need to be turned down to just HIGH or be played without AA... (sarcasm ON) which im sure is a horrible experience on that res
