What the heck is Windows 8.1 Embedded Industry Pro?

Seems like a normal windows 8.1...with a watermark at the bottom right. But why does it take up so much more space? It has no metro apps preinstalled.

But yeah. Makes no sense to me, TBH. I didn't even know it was a thing. I have often considered running Windows 7 Embedded (or Thin Client, whichever it's called) on a computer just to see what it is like.
