Ok, so I saw this video: 

 

And i can't stop to wonder: What would be the best experience of these two:
 

3x 1080p monitors and running games in the highest settings

3x 2560p monitors and running games in medium settings

 

I have for at long time wanted to buy a setup with 3 (or more) screens, but I can't decide what setup to go with. How to think about this, more pixels, or higher settings?

Honestly, this is subjective. I'd go with the 3 x 1080p personally. Or, of course, with a system that can actually run that resolution at high settings, not LOW like in that video. That rig they built there is good and all, but the Ultimate 4K build is much better...4930k vs 4790k and dual 290s vs. dual 780Tis... Do the math...

I already have a R9 290 and a 2600K.

I'm considering buying another 290, and then 3 identical monitors so brightness and colors are the same.

1080p would be your best bet because games are now using more technology and would potentially require users to have better pc specs.

Well do you have the money to support triple screens of either size and computer to back them up?

I think that you are right in this observation, and might be what I end up doing :)

I have the money to create a similar system to what Linus shows in the above video. Only difference is that I'm running a 2600K, but I don't think that will be that much of a problem. It won't be a bottleneck.

 

I'm pretty sure, that with 2x R9 290's I will be able to run most games in 3x1080p with high to maximum graphics, and 3x2560 in medium.

Well that's good, I would also consider fitting those monitors on your desk/table. Im running triple 23", Im sure I could fit 27"  but I definitely prefer playing maxed out @ 120 hz over a larger res.
